Cinnamon Banana Muffins

This recipe is a super easy, healthier alternative to store bought muffins that contain a lot of added sugars. This recipe only uses 10 ingredients!


Servings: 12


Ingredients:

▪️4 ripe bananas (mashed)

▪️1/4 c honey

▪️1 Tbsp vanilla extract

▪️1 Tbsp coconut oil (melted)

▪️1 egg

▪️5 oz unsweetened greek yogurt

▪️1.5 c whole wheat flour

▪️1 tsp baking soda

▪️1/4 tsp salt

▪️2 tsp cinnamon

▪️optional: reserve 12 slices of banana for garnish and top with a sprinkle of ground nutmeg


Directions:

  1. Preheat the oven to 350F and grease your muffin pan.

  2. In a large bowl, mash the bananas, add all ingredients, and mix together until a thick batter forms.

  3. Use a 1/4 measuring cup to pour the batter into the muffin pan.

  4. Top the muffins with 1 slice of banana for each one and sprinkle some ground nutmeg on top.

  5. Bake for 20 minutes. Enjoy!
